    This salad provides a great mix of antioxidants fr This salad provides a great mix of antioxidants from the mixed greens and cabbage. Edamame boosts the fiber and protein in this dish. Mandarin oranges are a great seasonal addition, and pack in vitamin C – great for enhancing iron absorption from the edamame.

Mixed greens + Red Cabbage + Mandarine Oranges + Shelled edamame + Sesame Oil and Vinegar dressing

Whisk together the sesame oil and vinegar into a dressing. Add salt and pepper to taste. Peel mandarin oranges and divide into smaller pieces. If edamame is frozen, defrost overnight or in the microwave. Combine ingredients in a bowl and drizzle with salad dressing. Enjoy!
