Bring the Beach to You with These Summer Seafood Picks!

Now that it’s officially June, many of us are taking vacations to the beach for the summertime. The breezy, salty air and time spent relaxing by the waves makes us crave fresh seafood, but who says we have to reserve all of that delicious seafood for vacation? Bring the beach to you with these summer seafood meal ideas!

Baked Cod with Mango Salsa

This light and summery dish is sure to be a crowd pleaser. Season cod filets with paprika, salt, and pepper and bake in the oven at 400F for 22-25 minutes, or until the fish separates easily with a fork. While the fish is baking in the oven, make mango salsa by combining diced mango and red pepper, chopped green onions, minced cilantro, and a squeeze of fresh lime juice. After the cod is done baking, top it with mango salsa and serve with lime wedges.

Sheet Pan Lemon Salmon

It really doesn’t get easier than this delicious sheet pan salmon. Start by preheating the oven to 375F and lining a baking sheet with foil. Place your salmon filet in the foil skin-side down, and nestle in lemon slices underneath the salmon. Stir honey and lemon juice into a bowl with melted butter, then fold up the edges of the foil around the salmon. Pour your buttery mixture on top of the salmon filet and bake for 15 minutes, or until fully cooked. For garnish, top with fresh parsley.

Grilled Shrimp Skewers

These shrimp skewers are the perfect way to incorporate seafood to your next cookout. Start by making a marinade with olive oil, lemon juice, salt, pepper, oregano, paprika, and garlic powder, and whisk to combine. Toss your shrimp in the mixture and allow it to marinade for a minimum of 15 minutes. Skewer about 4-6 shrimp with metal or wood skewers (be sure to soak wooden skewers in water prior to grilling to avoid burning) and grill for 2-3 minutes on each side. Serve with lemon slices and parsley.

Fish Tacos

Fish tacos are easy to make and easily adaptable, so they are sure to be a summer staple. You can choose any white fish, such as snapper, catfish, tilapia, or cod. First, prepare your seasoning mixture for the fish by combining chili powder, paprika, garlic powder, and salt. Sprinkle the seasoning on both sides of your fish, and cook in a nonstick skillet with olive oil for about 4-7 minutes per side. While the fish is cooking, whisk together plain Greek yogurt, lime juice, garlic powder, salt, and a little sriracha if you like spice. Fill corn or flour tortillas with the cooked fish, shredded cabbage, sliced avocado, and top with the Zesty Greek yogurt sauce. Garnish with chopped cilantro and serve with fresh lime.
